Eggplant and Feta Pizza

Fire up the grill for our Eggplant and Feta Pizza. A smoky delight.

Note: The great thing about making your own pizza is that the bare crust is just like a blank canvas. Let your inner Rembrandt have his way, and use the following ingredients in the amounts that taste right to you.

Ingredients:

  • 1 Rustic Crust Ciabatta Crust
  • Eggplant, cut into ½” slices and pregrilled
  • Olive oil
  • Feta cheese
  • Green or Kalamata olives, sliced
  • Mozzarella cheese, shredded
  • Garlic, fresh chopped
  • Parmesan cheese, shredded

Directions:

  1. Preheat grill.
  2. Brush one side of crust with olive oil.
  3. Place oil side down on grill, and cook for 2 minutes with lid closed.
  4. Turn crust a bit and continue cooking for another 1.5 minutes.
  5. Remove from grill and begin adding ingredients to the cooked side.
  6. Start with mozzarella and spread evenly.
  7. Lay pregrilled eggplant over cheese.
  8. Sprinkle olives.
  9. Add some garlic.
  10. Crumble feta cheese over the pizza.
  11. Add some Parmesan, sea salt, and pepper to taste.
  12. Place back on grill for a couple minutes. Be sure to close lid.
  13. Turn the pizza and cook until cheese is melted.
  14. Slice and enjoy!
