Caprese Pizza

Grab a cold beverage, and fire up the grill. We’re bringing the pizza-making outdoors! This is a great way to use ingredients fresh from your garden.

Note: The great thing about making your own pizza is that the bare crust is just like a blank canvas. Let your inner Rembrandt have his way, and use the following ingredients in the amounts that taste right to you.

Ingredients:

  • 1 Rustic Crust Thin Crust
  • Olive oil
  • Basil pesto sauce
  • Fresh sliced mozzarella cheese
  • Fresh sliced tomato
  • Fresh basil, julienned
  • Balsamic Reduction Sauce (see recipe below)

Directions:

For Balsamic Reduction Sauce:

  1. Combine 1 cup balsamic vinegar and 1½ T brown sugar in pan, and simmer until reduced to half.

For pizza:

  1. Heat grill.
  2. Spread olive oil over one side of the crust.
  3. Place on grill with closed lid for one minute.
  4. Spin crust so it cooks evenly.
  5. Grill another 30 seconds.
  6. Remove crust from grill.
  7. Flip crust over so you will be placing ingredients on the grilled side.
  8. Spread basil pesto evenly over crust.
  9. Add slices of mozzarella.
  10. Add tomatoes.
  11. Sprinkle fresh basil over the tomatoes.
  12. Salt and pepper to taste.
  13. Place pie back on grill until cheese melts.
  14. Remove from grill and drizzle Balsamic Reduction Sauce to taste.
